NASSAU, BAHAMAS – Welcome to Tacos and Tequila! The first of the three marquee events for the Nassau Paradise Island Wine and Food Festival.

Thursday night led us to the sandy shoreline of Paradise Harbor. Hundreds of guests and locals sipped on spirited beverages while we sunk our teeth into a variety of delicious tacos prepared by local and international chefs.

I was more than delighted to indulge in the festivities and speak to the evening’s featured chef, daytime Emmy award winner, Michael Symon, who served a delicious duck confit taco.

I love duck and I know a lot of people were doing seafood because of where we are. So we kinda braised the duck confit blackberry barbecue sauce. It’s a little sweet, a little acidic, got a little heat. Hit all the notes. Then you got the great crunch of the corn tortilla.

Now chef, I don’t know if you know, but there is a local vendor here Deja Rutherford with Da Kitchen Culture. She’s also she’s also serving a duck. Did you know that?

I did not. I think we should go over there and taste her duck. Let’s go!

Guys we’re both doing confit tacos. Here, we brought you some. We ended up doing it on a chip because I didn’t want to feel the heat.

And to take an already phenomenal night over the top, Grammy award winning group Baha Men gave an electrifying performance of their hit songs we’ve all grown to love.
